Mediterranean Pork Chop

Mediterranean Pork Chop

  • 4 pork chops
  • few sprigs of basil
  • few springs of parsley
  • oregano
  • lemon zest
  • 1/4 teaspoon rosemary
  • 2 garlic cloves
  • 2 yellow belly pepper
  • 1 red belly pepper
  • 2 tomatoes
  • sea salt, pepper
  • allowed oil for frying

Mix in a bowl chopped basil and parsley, add oregano, mashed garlic and lemon zest. Add little oil, salt and pepper and stir. Tenderize pork chops using meat mallet and then pour prepared marinade over them. Leave in the fridge for at least 120 minutes. Chop yellow and red belly pepper into larger cubes, as well as tomatoes. Fry marinated pork chops on oil to get nice golden color from both sides. Remove them from the pan, then add chopped peppers and fry until half softened. Then add tomatoes and spices per your taste and continue frying until vegetables softened and until excess fluid boils. Serve prepared pork chops with vegetables.
