Ingredients
- 1 small cucumber
- 50 g cherry tomatoes
- 1 small red belly pepper
- 1 young carrot
- 1 sprig of spring onion
- few leaves of chicory
- 1 leaf of fresh crystal lettuce
- few sprig of fresh parsley leaves
- juice of 1/2 lemon
- 1 garlic clove
- 2 tablespoons olive oil
- sea salt
- basil
Preparation
Wash cucumber and chop completely with green skin into thin circles, chop cherry tomatoes in halves, red pepper into stripes, carrot and spring onion into circles and chicory and crystal lettuce into larger pieces. Mash garlic and mix with olive oil, lemon juice, basil and chopped parsley. Sterilize a glass jar and pour prepared marinade on the bottom, then arrange cucumber, cherry tomatoes, pepper, crystal lettuce, chicory and spring onion. Close the jar and just before eating, turn it upside down and shake it until the marinade is evenly spilled.
