Red Onion With Adzuki


  • 5 red onions
  • 200 g Adzuki bean
  • 1 classic onion
  • 2 sprig of young onion
  • 2 garlic cloves
  • allowed oil
  • sea salt, pepper


Pour water over Adzuki beans and cook. When cooked drain from water and keep that water. Peel red onion, cut the heads at the top and keep that covers. Then carefully scoop out pulp taking care to keep the membrane intact. Chop that pulp, as well as classic onion, while you’ll mash garlic. On a little allowed oil fry chopped classic and red onion, then add mashed garlic and finelly chopped parsley and briefly fry. Add cooked beans, add spices per taste and stir. Add water where the beans were cooked as needed. Stuff prepared heads of red onion with that mixture and cover with preserved covers. Arrange in greased baking dish in which you add little water and bake in preheated oven on 200 degrees until red onion soften.
