- 600 g cauliflower
- 4 eggs
- 3 tablespoons flour (spelt, rye, buckwheat)
- 150 g butter
- 2 tablespoons grated Parmesan
- 1 tablespoon chrono bread crumbs
- sea salt, white pepper
Foamly whisk egg whites. Divide cauliflower into florets and blanch it. Whisk butter, add egg yolks, flour and finely chopped parsley. Add salt and pepper. Stir the mixture gradually adding whisked egg whites. Finaly add blanched cauliflower. Pour mixture in a baking dish greased with butter and sprinkled with chrono bread crumbs. Bake in the oven until get nice golden color. Cut into slices and sprinkle with Parmesan.
