Peach, Plum And Hazelnut Pie


For the dough:

  • 2 cups almond flour
  • 3 tablespoons coconut sugar
  • pinch of sea salt
  • 1/2 teaspoon nutmeg
  • 1 teaspoon lemon zest
  • 1 egg white
  • vanilla extract
  • 1 tablespoon coconut fat
  • water as needed

For the cream:

  • 1 peach
  • 2 plums
  • 1 teaspoon coconut sugar
  • 1/2 cup hazelnuts
  • juice of 1/2 lemon
  • 1 teaspoon coriander


  • 1 peach
  • 1 plum
  • little coconut sugar
  • juice of 1/2 lemon


Mix all dry ingredients, add wet ingredients and knead medium soft dough. Stretch it and cover the base and the edges of the round baking dish with it. Before that grease baking dish with butter, olive oil or use a baking sheet. Place all ingredients for the cream into a blender and mix until get a compact mixture. Arrange prepared cream over the base. Cut peach and plum into slices, mix with little coconut sugar and lemon juice and arrange over the cream. Place in preheated oven and bake on 175 degrees about 1 hour, depending on the oven. Wait to cool, then cut into slices and enjoy.
