Spinach Pie I

Spinach Pie I

  • 2 handfuls of spinach
  • 300- – 400 g some young cheese
  • 5 – 6 sheets of buckwheat phyllo dough
  • 2 tablespoons melted pork fat
  • 1 cup of mineral water

Wash spinach and chop it, crumble cheese and mix with the spinach. Add salt if the cheese isn’t salty enough. Coat one sheet of phyllo dough with mineral water, then grease with melted pork fat and spread the cheese and spinach mixture over the longer part. Roll and twist it like a snail and place it in the middle of the greased baking dish. Repeat the procedure with the next sheet, and put it in as a snail extension. And so until you have consumed all the material. Coat the rolled pie with mineral water and melted pork fat and place in a preheated oven. Adjust the baking time to your oven.
