Coconut And Lime Triangles


For the base:

  • 2,5 dl almonds
  • 2,5 dl coconut
  • 8 fresh dates

For the filling:

  • 1,5 dl coconut oil
  • 2 avocados
  • 1,5 dl lime juice
  • zest of 2 limes
  • 1 dl honey or agave syrup (melted on steam if thick)
  • 1/2 coconut cream


Chop almonds, add coconut and at the end add dates without seed. Mix all into a blender. If necessary, add water to make the mixture sticky enough (not too much) to form. Transfer the mixture to a baking tray (or into muffin molds) and then press and stretch. Melt coconut oil on moderate temperature. Finely chop avocados using a hand mixer or a blender, then add coconut cream, lime juice and honey. When you get a compact mixture without parts of avocados then add coconut oil. Fill already prepared bases, garnish with lime and coconut chips and put them together in the freezer for a minimum of three hours to tighten everything. Remove 10 to 15 minutes before serving and enjoy.
