Hummus With Oyster Mushrooms


  • 250 g cooked chickpeas
  • 30 g dried oyster mushrooms
  • 1 red onion
  • 1 garlic clove
  • juice of 1 lemon
  • 1 tablespoon tahini
  • olive oil, sea salt, pepper, crushed chili pepper…


You can use cooked chickpeas from the can or to cook chickpeas by yourself. Soak dried, roasted or raw chickpeas into the water and leave overnight. In the morning throw out that water, pour new, add a pinch of baking soda and cook for 30 minutes to 1 hour. Then soak dried oyster mushrooms into hot water and leave for 10 minutes. In the meantime finely chop red onion and fry it on little oil. Add chopped garlic, then add oyster mushrooms and little water in which you soak them and cook on moderate temperature for 5 to 10 minutes. Place chickpeas into a blender, add fried red onion, garlic and mushrooms. Chop all in a blender, add spices, tahini and lemon juice. Taste and add more spices if necessary.
