Spicy Cauliflower With Almonds


  • 1 cauliflower
  • 50 g butter
  • few tablespoons of olive oil
  • 2 teaspoons caraway
  • 2 teaspoons coriander
  • 2 teaspoons paprika + pinch of crushed chili pepper
  • sea salt
  • 1 handful blanched almonds
  • 1 lemon


Heat the oven on 220 degrees. Chop the cauliflower into florets and put in boiling water for few minutes, just to blanch it a bit. Remove from the heat, drain and let all the water evaporate from it (you can put it back in the hot pan for another 1 minute). Add olive oil and a piece of butter. Mix all spices and put on the pan, then add finely chopped almond and fry together for few minutes. When they get a darker color, add cauliflower and fry together for a few more minutes. Then add lemon juice. If your pan can go to the oven, place it on 15 minutes, or transfer to some baking dish and bake for 15 minutes. Serve with some fresh salad.
