Vegetables For The Soul


  • 2 red onions
  • 1 leek
  • 6 – 7 sweet red peppers
  • 1 large eggplant
  • 2 carrots (if you’re in restriction skip this vegetable)
  • 2 – 3 tomatoes
  • pepper in grain, salt, chili pepper
  • fresh parsley


Chop red onion and leek and fry on oil or pork fat with a pinch of salt to speed up process. In a meantime chop sweet red peppers and add to softened onion and leek. Then chop eggplant into cubes completely with the skin and add into the pot. Now, you can add chopped carrots if you’re not in restriction phase. Chop tomatoes into cubes and add to other vegetables. Pour about half cup of water, pepper in grain, salt and chili pepper. Put the lid on the pot, reduce temperature on low heat and let cook about two hours. Sprinkle with chopped parsley and enjoy.
