Cracklings And Cheese Bannock


  • 250 g spelt flour
  • 150 g Feta cheese
  • 100 g tiny cracklings
  • 130 g grated iced butter
  • 4 – 5 tablespoons iced water
  • pinch of sea salt


Put grated iced butter into flour and stir using wooden mixing spoon to crush lumps from the butter. And be quick not to melt the butter. Add the crushed cheese and cracklings. Mix well all, then slowly add a tablespoon of ice water to your dough. And add until form the ball or homogeneous mixture. Pour the dough on a working surface, knead little more, then form the disc and wrap into transparent foil. Place in the fridge for at least one hour. This dough should be cold when it goes into the oven. Sometimes it can be left overnight, and in the morning to be baked. Before baking, preheat the oven to 220 degrees. The disc should be a centimeter of thickness. Take the molds per your wish and form bannocks. Bake until get nice golden color, it will be baked very quickly, probably in 15 minutes.
