Ingredients
- 2 desalted cod
- spices per taste
- little olive oil
- little ground almonds
- 1/2 yellow belly pepper
- 1/2 red belly pepper
- 1 small or 1/2 large zucchini
- 1/2 eggplant
- 1/2 leek or 1 spring onion (white part)
Preparation
Although cod is desalted, the recommendation is to soak it into water for at least two hours. Then drain the fish and cut into pieces 2 x 2 cm, put into bowl, add spices and oil and rub into the fish. Then roll the fish into ground almonds or sesame and prepare vegetables. Chop the all vegetables into pieces little bit smaller then fish, salt a little, grease with oil and add spices per your wish. Arrange the fish and vegetables in a greased baking dish and place in preheated oven on 180 degrees. Bake about 30 minutes. Before serving you can sprinkle fish with little olive oil.
