Eggplant Kebab


  • 1 oblong young eggplant
  • 150 g minced meat (pork, beef, lamb)
  • spices: sea salt, pepper, oregano, cumin…
  • bamboo wooden skewers sticks


Mix minced meat with spices and knead well. Wash eggplant and cut it crosswise, on 2-3 cm rings, salt on both sides, but do not confuse with the order. Make a kebab – arrange on skewers sticks: one piece of eggplant, one piece of minced meat… and so on… until you have ingredients. Put kebabs in baking dish on baking sheet, grease with olive oil and bake in the oven until eggplant become well done and meat is baked. Serve with some salad, for example grated fresh beetroot and carrot, seasoned with salt, lemon and olive oil, and sprinkled with fried sesame.
