Pepparkakor Honey Cake


For pepparkakor (spice for honey cake):

  • 4 tablespoons ground cinnamon
  • 3 tablespoons ground cloves
  • 3 tablespoons ground cardamom
  • 4 tablespoons ground ginger

For the balls with the taste of honey cake:

  • 1 cup (2 dl) ground almonds (or cashew)
  • 10 fresh dates
  • 1/2 dl coconut oil
  • pinch of sea salt
  • 1 teaspoon vanilla aroma
  • 2 teaspoons pepparkakor
  • cinnamon for rolling


When making pepparkakor mix all spices, put in jar and store to prepare magical sweets. For the balls with the taste of honey cake or gingerbread you should roast almonds in the oven. Then put almonds into blender and chop per desire, then add fresh dates (you previously remove seeds), olive oil, sea salt, vanilla aroma and spice for honey cake. Mix all well and form balls from prepared mixture. Roll balls in cinnamon and enjoy.
