Hummus With Green Sauce


For hummus:

  • 100 g chickpeas
  • 1 teaspoon tahini
  • 2 tablespoons olive oil
  • juice of 1/2 lemon
  • 1 small garlic clove
  • pinch of sea salt
  • little cold water

For green sauce:

  • 2 bunch of fresh parsley
  • 2 garlic cloves
  • 1,5 dl olive oil
  • juice of 1 lemon
  • pinch of sea salt


For hummus you can use cooked chickpeas or to soak them in the evening and cook in the morning. When they are cooked and softened put them into blender, add garlic clove and mix as fine as possible. Then add salt, tahini, lemon juice and mix well again. At the end gradually add water to get desired density. To make green sauce just put all ingredients into blender and mix well until you get thick sauce. Serve hummus into bowl, make a recess in the middle and pour sauce in it. At the end sprinkle with some chilli if you like hot spicy.
