Mackerel With Spinach Pesto


  • 4 cleaned mackerels without head
  • 150 g young spinach
  • 1 bunch of fresh parsley
  • 4 garlic cloves
  • 100 ml allowed oil
  • 1 lemon
  • sea salt, pepper


Wash young spinach, bunch of parsley and cleaned garlic. Mix in a blender spinach, parsley, garlic, lemon juice and oil. Mix until get nice creamy pasta. Wash mackerels, salt them and arrange in a greased baking dish. Cover with foil and bake in preheated oven on 200 degrees about 30 minutes. Then remove foil, cover the fish with prepared pesto and continue baking more ten minutes. Serve with lettuce or iceberg salad.
