Popeye's Eggs - Scrambled Eggs With Spinach Pesto


  • 2 handfuls of spinach
  • few garlic cloves
  • 1 dl olive oil
  • juice of 1/2 lemon
  • pinch of sea salt
  • 3 eggs
  • 1 tablespoon pork fat


Put all ingredients except eggs and pork fat into blender and make pesto. Try and add some spices if needed. You can consume this spinach pesto in the morning – with chrono bread, for lunch with some meat or for dinner with some fish. Or in this case combined with scrambled eggs. Whisk the eggs. In a frying pan melt and heat pork fat, pour eggs in it and add pesto in a circle. Cover the frying pan and fry on low temperature until egg are done.
