Mediterranean Chicken


  • 1 large chicken breasts
  • few leaves of sage
  • 100 g green and black olives
  • 3 large tomatoes
  • 3 large red peppers
  • 2 onions
  • 200 ml vegetable broth
  • 3 garlic cloves
  • 1 bunch of parsley
  • sea salt, pepper
  • allowed oil


Cut tomatoes into cubes, peel pepper from the stems and the seeds and also cut into cubes. Finely chop the onion and mash garlic. Mix in a baking dish tomatoes, pepper, onion and garlic with little oil. Add salt and pepper and pour vegetable broth. Spice chicken meat per your taste, then raise the skin and put sage leaves between skin and the meat. Place the meat over the vegetable, cover with foil and bake in preheated oven on 200 degrees about 30 minutes. Then remove the foil, add olives and continue baking until meat get nice golden color and the excess liquid does not evaporate. Sprinkle with chopped parsley and serve.
