"3 Cups" Bread


  • 1 cup rye flour
  • 1 cup buckwheat flour
  • 1 cup spelt flour
  • 1/2 teaspoon sea salt
  • 2 teaspoons baking powder
  • 1 tablespoon olive oil
  • 1,5 cup water


Mix in a bowl flours, oil and water. Knead the dough, cover with transparent foil and leave overnight or day (as long as possible). After the completion of fermentation add salt and baking powder and knead nicely into the dough to distribute evenly. Put baking paper into baking dish and pour mixture into it. Align with wet hands, put into the oven and bake on 210 degrees. Use toothpick to check is it baked. Then wrap into dry dishcloth and leave to cool.
