Pastry With Lemon And Flax


  • 110 g spelt flour
  • 40 g millet flour
  • 1 teaspoon psyllium
  • 1 teaspoon pork fat
  • 2 tablespoons flax seeds
  • 100 ml water
  • 1 teaspoon baking powder
  • lemon zest
  • sea salt
  • 1 egg yolk


Pour into bowl flour and psyllium, mix, then add pork fat and rub it into flour. Add water and ground flax immediately before use. Mix the dough and leave the ball covered at least 5 to 6 hours to rest. After this time add baking powder and lemon zest and knead again. Stretch the dough, but not too thin and make shapes using molds. Arrange on a baking tray covered with baking paper and coat with egg yolk. Bake on 210 degrees 15 to 20 minutes.
