Pancakes With Scrambled Eggs


For pancakes:

  • 10 tablespoons spelt flour
  • 4 tablespoons olive oil
  • 100 ml mineral water
  • 100 ml lukewarm water
  • salt per taste

For scrambled eggs (per person):

  • 2 eggs
  • 50 g bacon


Put flour into bowl and mix it with a salt. Add oil, mineral water and lukewarm water. Mix all with spoon while adding liquid. When make a mixture leave it for 5 to 10 minutes. Stir once again and check whether it’s good density. The mixture should be homogeneous, slightly silky. Heat pan for pancakes, add a pinch of olive oil, just not to be dry and fry your pancakes from both sides. Chop bacon and put in heated frying pan and when become crispy pour beaten eggs and just stir them with spatula. Just for a few seconds and it’s done. Put scrambled eggs onto pancake, then switch pancake and eat while hot.
