Chickpeas And Carrot Salad


  • 5 tablespoons of cooked chickpeas
  • 1/2 pepper
  • 1 carrot
  • 1/2 tablespoon of olive oil
  • few sprigs of fresh parsley
  • little leek
  • 1 tablespoon of aceto balsamico or lemon juice
  • spices: salt, colorful pepper, garlic in granules…


Cut the pepper into stripes and fry a bit on a oil, just to soften. Grate carrot and mix with chickpeas. Spice pepper with salt, colorful pepper, pinch of ground cumin and garlic in granules. Leave to cool a bit and add to chickpeas and carrot. Chop parsley and green part of the leek and add to prepared mixture. At the end spice with aceto balsamico and stir all. If you’re in restriction use lemon juice instead of aceto balsamico.
