Bounty Cake


For crust:

  • 9 egg whites
  • 100 g of coconut sugar
  • 200 g of coconut flour
  • pinch of salt

For filling:

  • 11 egg yolks
  • 50 g of coconut sugar
  • 300 g of black chocolate with 70% cocoa
  • 300 g of butter
  • 200 ml of whipping cream


Beat egg whites with sugar and salt into foam. Then mix coconut flour in it and stir with wooden spoon. Bake in the large baking tray on 150 degrees for about 30 minutes. Cook egg yolks on a steam with coconut sugar and add 300 g chocolate. When the filling cool a bit add 300 grams of foamy mixed butter and 200 ml of heavy whipping cream without added sugar. Cut the crust into three parts by length, and fill the cake, cool it and serve it.
