Chocolate And Almond Cake


  • 100 g butter
  • 200 g chocolate with 70% cocoa
  • 3 eggs
  • 75 g fructose
  • 75 g ground almonds
  • 75 g cleaned cherries

For Ganache:

  • 100 ml whipping cream
  • 100 g chocolate with 70% cocoa


Melt butter and chocolate on a steam to get compact mass. Whisk the egg yolks with fructose to get light mass. In other bowl whip egg whites into foam. In the egg yolks mass add melted chocolate and butter. Then add ground almonds and gently stir. At the end add whipped egg whites. Cover the mold for the cake (diameter 18 cm) with baking paper and pour mixture in it and align. Bake in preheated oven on 180 degrees about 35 minutes. Leave it to cool and then carefully pull out and put on a plate. For Ganache heat the whipping cream in a sauce pan and when boiling pour over chopped chocolate and stir until it melts. What until Ganache cool a bit, then whisk the mixture in one direction until smooth and creamy. This may take a little while, just keeping whisking. Cover the cake with Ganache cream and decorate with cherries.
