Tart With Zucchini


  • 250 g spelt flour
  • 1 tablespoon baking powder
  • 1 teaspoon sea salt
  • 50 g butter or pork fat
  • little cold water

For filling:

  • 1 zucchini
  • 2 eggs
  • 300 g cheese
  • sea salt
  • pepper
  • mix of spices (thyme, rosemary, basil, parsley)
  • little allowed oil


Mix in a bowl flour, baking powder and salt. Add butter or pork fat and with a little cold water knead the smooth dough. Leave it to rest 20 minutes, then stretch it using rolling pin into rectangular crust. Gently whip the eggs with a fork, then add cheese and put the mixture in the middle of the crust taking care that the edges remain unfilled. Then fold the edges inward so that the filling did not spill. Cut zucchini into thin circles and arrange over cheese filling. Spice with a bit of salt, pepper and spice mixture and sprinkle with a little oil. Bake tart in preheated oven on 200 degrees about 30 to 40 minutes.
