Orange Kugelhopf


  • 3 eggs
  • 160 g butter
  • 100 g fructose
  • 250 ml orange juice
  • orange zest
  • 200 g spelt flour
  • 30 g cocoa
  • 1 baking powder
  • 100 g chocolate with 70% cocoa
  • 3 tablespoons of allowed oil


Melt butter on moderate temperature. Mix fructose, cocoa, baking powder and spelt flour. In other bowl mix melted butter with orange juice and add to mixture of dry ingredients. Add orange zest and mix all using mixer. At the end add eggs and mix until you get compact mixture. Small form for kugelhopf (diameter 20 cm) grease with oil and sprinkle with flour and pour prepared mixture in it. Bake in preheated oven on 180 degrees for 50 minutes. Baked kugelhopf turn upside down and leave to cool. Prepare glaze: melt chocolate on steam with a little allowed oil and pour over cake. Decorate per your taste.
