Chicken Cevapcici With Spinach Pesto


  • 500 g minced chicken meat (breasts)
  • 1 leek
  • 1 egg white
  • pinch of baking soda
  • 2 zucchini
  • 150 g young spinach
  • 3 tablespoons of olive oil
  • 2 garlic cloves
  • sea salt
  • pepper
  • allowed oil for frying


Cut leek into cubes and fry on a little allowed oil to soften. Drain it from oil. Mix in a bowl minced meat with fried leek, egg white and pinch of baking soda. Spice per your taste and knead with your hand. Leave in a fridge to rest 30 minutes.Then with greased hands form cevapcici. Fry them on heated oil until get nice golden color on all sides. Wash zucchini and together with peel cut into circles. Arrange them in a dish covered with baking paper, sprinkle with oil and bake in preheated oven on 200 degrees until golden yellow color. In a meantime prepare pesto. Blanch young spinach in a salted boiling water, then drain it and unite with garlic and olive oil. Mix it in a blender. Serve cevapcici with zucchini and spinach pesto.

Cevapcici or ćevapčići (formal diminutive) is a grilled dish of minced meat, a type of kebab, found traditionally in the countries of southeastern Europe (the Balkans).
