Chrono Sesame Sticks


  • 250 g barley flour
  • 250 g integral spelt flour
  • 1 tablespoon ground carob
  • 1/2 tablespoon cinnamon
  • 1/4 tablespoon baking soda
  • 1/4 tablespoon salt
  • 3 tablespoons olive oil
  • 250 ml water

For processing and spreading:

  • 50 – 100 g sesame
  • a cup of water into which a spoon of olive oil is added


Mix all dry ingredients, then add oil and water. Knead compact dough and form into ball. The dough is like clay and difficult to process. You should knead the dough five to ten minutes. Leave to rest for half an hour.
Sprinkle some of the sesame on the work surface. In a sufficiently wide shallow bowl mix water and oil. Twitch a bit of the dough forming small balls. Then dip the balls into water and roll each one quickly between your palms to form thin sticks about 15 cm in length and about 1.5 cm in width. Roll the sticks into the sesame. Arrange them on a tray lined with baking paper. Heat the oven to 200 degrees and bake the sticks for 35 minutes.
