Roasted Salmon On A Bed Of Spinach

  • 500 g of salmon
  • 500 g of spinach
  • 1 clove of garlic
  • 2 tablespoons of mustard
  • 1 tablespoon of ketchup
  • olive oil
  • 1 lemon
  • salt, pepper

Wash the fish and wipe it fine with a paper napkin, gently tapping. Mix the mustard, ketchup, salt to the taste and cover the fish (the skin should not be coated). Cover with transparent foil and leave in the fridge for about an hour. Transfer the fish in the baking dish and gently sprinkle with olive oil. Bake in a heated oven at 220 degrees for about 35 minutes. Remove from the oven and serve over blanched spinach, spiced with lemon juice and finely chopped or pressed garlic.
