Spinach Pie


  • 500 gr spinach
  • 1 onion
  • 5 eggs
  • 250 gr young cheese
  • olive oil
  • salt
  • pepper

Chop the onion and fry on oil until transparent. Then add chopped spinach and fry for more 10 minutes gradually adding a bit of water until spinach softened. In a meantime whip egg whites, then add egg yolks and whisk all. Add whisked eggs into onion, add crumbled cheese and pour the mixture into baking dish. Bake at a moderate temperature for some 20 – 30 minutes until eggs are cooked.

This is a complicated dish (mixing eggs and cheese) so it is recommended once a month if you are in a restriction.
