  • 100 g al dente cooked barley
  • 100 g mozzarella
  • 50 g some cured meat product
  • 1 egg
  • little chrono bread crumbs
  • oil or pork fat for frying or little olive oil if you’re going to bake in the oven


Cook the barley in salted water to be al dente (that means 5 minutes shorter than indicated on the package), then chop it into blender or chopper. Add cheese and cured meat product and make rollers. Soak them into whisked egg, then into bread crumbs and fry on oil or pork fat. Or arrange in a baking dish greased with little olive oil and bake in the oven on 200 degrees until get a nice golden color. Decorate with chopped parsley.

Due to combination of cheese and eggs, this is a complicated dish and should be consumed once in 15 days.
