Christmas Pizza From Sicily


For the dough:

  • 2 dl rye flour
  • 2 dl water
  • 1 teaspoon psyllium
  • 1 teaspoon baking powder
  • 1 teaspoon olive oil

For the stuffing:

  • 1 large onion
  • 1/2 can pelato tomatoes
  • 5 anchovies
  • litte oregano
  • 100 g mozzarella cheese
  • 2 tablespoons bread crumbs
  • 2 tablespoons Parmesan cheese (optional, if you’re in restriction skip it or replace with little mozzarella cheese)


Mix all ingredients for the dough and leave for a while to allow psyllium to do its job. Fry chopped onion on little oil and water. Add anchovies to melt them. Then add pelati tomatoes and cook well, then add oregano. Stretch the dough half a finger thick with oiled hands. You can put it in the hot oven for five minutes to get crispy. Then put the sauce on it and sprinkle over with chopped mozzarella, about 100 grams. Over that arrange mixture you made of 2 tablespoons bread crumbs, 2 tablespoons Parmesan and little oil. Place pizza in the oven for 10 to 15 minutes at 220, 230 and even 250 degrees.
