Cheese And Black Beer Sauce


  • 2 dl sour cream
  • 1 dl water
  • 2 – 3 tablespoons flour
  • arbitrary amount of cheese (cheddar, parmesan, some old cheese)
  • 2 dl black beer
  • 2 egg yolks
  • sea salt, pepper
  • arbitrarily spring onion and bread crumbs


Mix sour cream and water in a saucepan. When heated to a boil add flour and whisk. When thickened after a few minutes, add the cheese and continue to whisk. Then add black beer and continue to whisk. This will take about 10 minutes until the sauce thickens completely. Add salt and pepper. You can also enrich this sauce with spring onion. Also, while you are slicing the bread, whatever is crumbled, you can put in the sauce and stir (that bread will play bread crumbs that will further thicken it). When you have reached the right density, remove the sauce from the heat, add two egg yolks and stir. Put a lot of this enriched béchamel on the bread slices and put in the oven under the heater for literally a few minutes, just to get a nice golden color.
