Holiday Muffins


  • 1 cup whole wheat spelt flour
  • 1 cup whole wheat rye flour
  • 1/2 cup barley flour
  • 1/2 cup olive oil
  • 1 cup mineral water
  • 3 eggs
  • 3 handfuls spinach
  • 1 teaspoon sea salt
  • 1 baking powder
  • 200 g |Feta cheese + little mineral water
  • cherry tomatoes


First blanch spinach, drain and finely chop. Then mix all dry ingredients. Whisk the eggs in another bowl, add mineral water and oil, and then add dry ingredients. At the end add spinach and stir. Pour the mixture using ladle into molds for muffins in which you placed muffin liners. This quantity will be enough for 12 muffins. Bake on 220 degrees about 30 minutes. Mix in a blender Feta cheese with little mineral water. The mixture should be thick. Place it in a decoration syringe and pretend to decorate muffins with whipped cream. Place half a cherry tomato over each muffin. And here’s a nice holiday breakfast.
