Minced Meat Ragu

Ingredients

  • 400 g minced meat of your choice
  • 1 onion
  • 2 carrots (those in restriction can replace with zucchini)
  • 1 stick of celery
  • 3 garlic cloves
  • 1 sweet red pepper
  • 6 medium kohlrabis
  • 2 – 3 tablespoons tomato puree
  • 1 can of tomatoes in pieces
  • 7 dl hot water
  • 2 cubes of broth (homemade of course) or skip this and add more spices per your taste
  • 1,5 tablespoon Dijon mustard
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 2 tablespoons finely chopped parsley
  • sea salt, pepper

Preparation

Finely chop onion and celery, grate on large carrots or zucchini. Fry vegetable on little oil until softened. Then add minced meat and crushed garlic. When the meat changes color, add all spices except broth and parsley. Stew for a few minutes, then add tomato puree and stew a few more minutes. Add finely chopped sweet red pepper, stir and stew on moderate temperature a few minutes. When everything is nicely stewed, add canned tomatoes, broth and hot water. Cover and let cook for about 20 minutes. In the meantime peel kohlrabi, chop into cubes, add to the meat and cook until kohlrabi soften. When the ragu is cooked add finely chopped parsley, salt, pepper to taste and enjoy a delicious quick and economical meal.
