Creamy Pumpkin Soup


  • 1 kg pumpkin
  • 1 l broth
  • 2 medium onions
  • ginger
  • 1 garlic clove
  • 1 dl white wine
  • sea salt, pepper, chili
  • 1 cup sour cream


Finely chop onion and fry it on little allowed oil and water. Before the end add chopped garlic and ginger. Then add chopped pumpkin. The finer you chop it, the faster it will cook. When the pumpkin starts to stew pour broth in it and let cook. It won’t take more than twenty minutes. When it softens, put all into blender and finely mash everything. Then bring back to the heat, add white wine and spices. Let it cook a little more. When done add the sour cream. You can also add crushed pumpkin seeds for decoration.
