Frittata With Pancetta And Zucchini


  • 5 eggs
  • 5 tablespoons oat flour
  • 100 g pancetta
  • 1 medium zucchini
  • 1/2 red onion
  • pinch or two of sea salt
  • little olive oil
  • spices per taste


First finely chop pancetta and fry it little with finely chopped onion. Then whisk the eggs, add salt and gradually add flour. Grate zucchini, salt it, then drain the excess liquid and add to the eggs. Grease baking dish (you can use cake mold) and pour mixture in it. Arrange pancetta and onion over it. Put in preheated oven on 220 degrees and bake about 10 minutes. It should remain soft and not overdone. And enjoy.
