Vlach Pancakes


  • 350 g spelt flour
  • 2 large or 3 small eggs
  • pinch of sea salt
  • 1 baking powder
  • 300 g cottage cheese
  • 3 tablespoons olive oil
  • 6 tablespoons mineral water
  • 2 handfuls of chopped spinach (not required)


Put in a bowl all dry ingredients, then add eggs, oil, mineral water, cheese and spinach. On a working surface pour more flour, because this will be quite sticky. The dough should not be hard, it should be soft and a little sticky. Stretch the dough using rolling pin and then cut into smaller rectangles. Fry from both sides on moderately heated pork fat.
