Small Rustic Breads With Whey


  • 3 cups spelt flour
  • 1 cup rye flour
  • 1 cup whole wheat flour
  • 400 – 500 ml whey
  • pinch of sea salt
  • 2 tablespoons olive oil
  • 1 teaspoon baking soda
  • little lemon juice
  • seeds per taste


In the evening knead the dough from the flours, whey, olive oil and pinch of sea salt. In the morning add baking soda and lemon juice and knead again, this time on the floured working surface. Form small balls and sprinkle each in a little flour. Arrange your small breads on a baking paper, cut each deep to blossom during baking. Put in prehated oven on 200 degrees and bake about 25 minutes.
