Pindjur - Balkan Tomato and Red Pepper Spread


  • 1,5 kg red peppers
  • 1,5 kg tomatoes
  • 1 garlic
  • 1 bunch of parsley
  • 2 chili peppers
  • 1/2 cup olive oil
  • juice of 1 lemon
  • 20 g sea salt


Peel tomatoes and cut into smaller pieces. Pour olive oil into deep pan and heat on medium temperature, and then add tomatoes. Leave it to gently cook stirring occasionally. Clean red peppers from the seeds and cut into small pieces (app. 2.5 x 1.5 cm). Finely chop parsley, garlic and chili pepper. Also prepare salt and lemon juice. After 30 minutes of cooking tomatoes, add all ingredients except red peppers. Stir few times and continue cooking stirring occasionally. After ten minutes add red peppers and cook more 40 minutes. Pour into jars and your pindjur is ready to delight.

Depending on the type of tomatoes and peppers, that is, how much liquid they contain depends on whether you will cook it longer or slightly shorter.
