Breaded Eggplant From The Oven


  • 1 eggplant
  • 2 eggs
  • little rye flour
  • little sesame
  • pinch of sea salt
  • little grated mozzarella


Wash eggplant and cut it into nice circles. Salt the eggplant to release bitterness. After 15 minutes the eggplant is ready for coating. Whisk the eggs in one bowl, and put some sesame in another. Put the eggplant into flour to coat it on all sides, then soak them into whisked eggs, and then roll into sesame. You can apply double coating – to soak once again into flour after soaking into eggs. Arrange coated eggplant on baking tray covered with baking paper and put in preheated oven. Bake about 15 minutes on 200 degrees. At the end of baking you can add little grated mozzarella and put back in the oven for 5 minutes. Those in restriction phase can skip mozzarella and for example, add tomato sauce with spices to the blue eggplant.
