Irish Soda Farls


  • 2 cups spelt flour
  • 1 cup homemade buttermilk
  • 1 teaspoon (full) sea salt
  • 1 teaspoon (full) baking soda


Mix dry ingredients, make a recess in the middle, pour homemade butter and knead. Knead until the dough is ready to be transferred to floured working surface. Then knead it bit more on working surface, and shape the disc gently by pressing without using rolling pin. You should get a disc about 1 centimeter thick. Dip the knife into flour and cut the disc into 4 pieces. Heat the frying pan on moderate temperature, sprinkle some flour on it (don’t use any fat) and arrange the pieces like puzzle forming the disc, otherwise it won’t be baked well. Each part can be baked individually, but it can be boring because it takes about 20 minutes in the pan, so multiply by 4… and the baking soda starts working immediately and it is not advisable for these doughs to stand when kneaded. After 4-5 minutes take spatula, lift each piece to see the progress, because based on the edges will not be able to rate, if it already start to look dark it means that the temperature is too high, it should get a nice color, then reduce and continue baking on the same side for a total of about 10-12 minutes. When you flip it should have a nice color and when you hen tap it it should sound … empty. From the other side too.
