- 2 large codfish or if you have someone who will clean and cut it for you then app. 500 g pieces of fish
- 2 large zucchini
- 3 – 4 tablespoons olive oil
- fresh parsley
- 2 tomatoes and 1 tablespoon mashed tomato
- crushed hot pepper or curry

Grease baking dish with olive oil and arrange the fish pieces in it. Cut zucchini into rings and arrange over the fish. Peel tomato, finelly chop it and mix with tomato puree, chopped parsley, chopped onion and garlic and the spices you choose. If you need salt, never sprinkle directly on the fish but into the salted dressing to taste. In a little (no need to pour a lot of water since the zucchini will release it) of boiling water, then add salt and sprinkle it over the zucchini and fish together with olive oil. Over that pour mixture of spices, tomato and onion.
Preheat the oven to 250 degrees to start simmering” as soon as possible, then reduce to 200. When all the liquid has evaporated and the zucchini has baked, the meal is over.
