Taste Of The Orient In Buns


  • 200 g rye flour
  • 100 g buckwheat flour
  • 50 g kamut (khorasan wheat) flour
  • 5 – 6 tablespoons hemp flour
  • 5 – 6 tablespoons crushed flax
  • 2 ground anise
  • sea salt
  • caraway
  • 2 – 3 tablespoons olive oil
  • 1 tablespoon psyllium
  • 360 ml lukewarm water
  • 1 teaspoon baking soda
  • 1 teaspoon lemon juice
  • black sesame and pepita for sprinkling


Mix all dry ingredients in a bowl, except baking soda and lemon juice. Add lukewarm water and knead the dough. Leave it to rest overnight. In the morning add baking soda and knead (it will be hard and you’ll need to really use your muscles), then add lemon juice and continue to practice. Form buns, sprinkle with black sesame and pepita (press them bit into each bun) and put in preheated oven. Bake about 30 minutes on 180 degrees. The smell is phenomenal. Taste oriental.
