Cracklings And Cheese Muffins


  • 1 cup (2dl) millet flour
  • 1 integral wheat flour
  • 2 eggs
  • 100 g crumbled cheese
  • 100 g cracklings
  • 1/2 cup olive oil
  • 1 teaspoon sea salt
  • 1 baking powder
  • 1 cup mineral water


Mix all dry ingredients in a bowl, and add whisked eggs, cheese and oil. Grate cracklings (or chop but not to much in a chopper) and add to mixture. Gradually add mineral water and stir. Pour into silicone molds for muffins and bake about 25 minutes in the oven preheated on 180 degrees.

In the restriction phase, eggs and cheese are rarely mixed, so you can try making them without dairy.
