Colorful Eggs Against Bad Weather


  • 1 small red onion or 1/2 half of large
  • green part of leek
  • 1/2 eggplant
  • jalapeño or other chili pepper per taste
  • 1 red belly pepper (or green or yellow)
  • 1/3 bunch of parsley
  • 3 eggs
  • sea salt, pepper
  • allowed oil for frying or pork fat


While baking some bread or pastry in the oven, chop vegetables. Heat oil or pork fat and fry chopped onion and leek on it, add eggplant, jalapeño and red belly pepper. The point is (don’t be afraid of high temperature) to briefly fry this, constantly stirring. Spice with salt and pepper, you can add chopped garlic or garlic powder as well. When the vegetables are nicely fried, make two holes (or three to four) – and break the eggs into it. All this lasts very short, if you like roasted egg yolks, fry longer. It takes 10-15 minutes for all of this, and the picture on the plate really cheers you up and makes you happy.
