Snails With Ham And Mushrooms


For the dough:

  • 250 g flour (mix of rye, spelt, buckwheat and barley)
  • 1 full tablespoon pork fat
  • 140 ml lukewarm water
  • 1 teaspoon sea salt
  • 2 teaspoons baking powder

For the filling:

  • crumbled cheese
  • 200 g mushrooms
  • 100 g ham
  • 1/3 bunch of dill
  • pinch of sea salt
  • pinch of pepper

More (optional):

  • hot sauce
  • cheddar cheese (or mozzarella)


First mix flours with sea salt and baking powder. Then add pork fat and mix using fork and finally add water and knead a little greasy and slightly stiffer dough. Leave to rest while chop mushrooms into leaves and ham into stripes. Then stretch the dough and coat it with cheese. Arrange mushrooms and ham over it, sprinkle with chopped dill, salt and pepper. Wrap into roll and then cut crosswise to get snails. Arrange them on baking tray covered with baking paper. On few snails put grated cheese, on few hot sauce and leave few without anything. Put in preheated oven and bake about 15 minutes on 220 degrees.
