Quick Pizza From The Pan


For the dough:

  • 130 g flour (90 g rye and 40 g spelt)
  • 1 tablespoon olive oil
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking powder
  • 60 ml water

For the filling:

  • 1 can pelati tomato
  • few black olives
  • 125 g mozzarella


Mix flours, salt and baking powder. Then add oil and water and knead a little harder, greasy dough. Leave it to rest while prepare ingredients for filling. Chop pelati tomato, olives and mozzarella. Stretch the dough using rolling pin into thin circle – the size of big pan. Grease pan with olive oil and heat it, put the dough into it, bake two minutes one side, then turn, reduce temperature, put chopped tomato, spice with salt and oregano, add chopped mozzarella and finally add chopped olives over cheese. Add more oregano, cover the pan and wait to melt cheese. That’s it. If you don’t have a large frying pan (as I don’t have one, but I borrow one), make two smaller pizzas and bake them in two rounds. Or two pans.
