Preparation

The striped red mullet or surmullet is a species of goatfish found in the Mediterranean Sea, eastern North Atlantic Ocean, and the Black Sea. and is considered the most delicious of smaller type of fish. This small fish can be fried, grilled or baked in parchment paper. Since we’re on the diet, the best way is to bake it in the oven. Before you prepare this fish, ask your vendor in the fish market to clean the fish for you and then make marinade for it. Chop green olives and spring onion and mix all with olive oil, sea salt and colorful pepper. Insert prepared mixture into the small slits under the head, as far as you can. Arrange fishes on baking paper and put the rest of the marinade over the fish and around it. Bake about 20 minutes on 200 degrees. When it’s time to take out from the oven, heat in some small sauce pan little olive oil with slices of garlic and hot peppers. When start to smell pour over the served fish and enjoy. Serve with some green salad and your dinner is ready.
