Choco Banana Bread


  • 60 g roasted hazelnuts
  • 230 g soft spelt flour
  • 30 g carob or cocoa
  • 4 tablespoons coconut sugar
  • 1 baking powder
  • 1/4 teaspoon baking soda
  • pinch of sea salt
  • 2 eggs
  • 100 g butter
  • 450 g peeled bananas (that’s about 800 g whole bananas)
  • 100 g chocolate with at least 75% cocoa


Heat the oven on 180 degrees. Chop hazelnuts and gently fry them on dry frying pan. Mix in a bowl dry ingredients (flour, carob, sugar, baking powder and baking soda). In other bowl mash bananas and mix with eggs and butter (warmed to room temperature and cut into pieces), add dry ingredients as well as the hazelnuts and chocolate pieces and mix all. Grease baking dish (mold) with butter or with coconut oil and transfer mixture in it. Align and bake about one hour. Use tip of the knife or toothpick to check is it baked. When baked leave the bread in the mold for some ten minutes, then take out of the mold and leave to cool and then cut it.
